Zucchini Fritters

So although these were not Ashton's most favorite, they sure were mine! They reminded me of hash-brown patties, but a "healthier" version.


So just like I said in the beginning, I make many mistakes. This one consisted of getting all the ingredients, getting home, realizing I had forgotten the main ingredient, zucchini, and having to call my husband on his way home to stop and grab some. So they became more of an "after-dinner" snack.


Here are the simple ingredients, once again found at Safeway....


2 cups coarsely grated zucchini
1/2 cup coarsely grated potato
sea salt
pinch of flour
1 egg
1 tablespoon chopped chives
1 tablespoon chopped mint
zest of one lemon
1/4 cup diced white onion
1 tablespoon unsalted butter



In a medium size mixing bowl combine the shredded zucchini and coarsely grated potato. Mix it together and remove from bowl and place veggies on paper towel to dry  and drain for 30 min. (This is a crucial step in making the patties).


Sprinkle sea salt on veggies as they drain & dry. 


After 30 min, squeeze veggies out one last time. Sprinkle with a pinch of flour to finish drying the veggies out.


In a bowl, whisk together egg, herbs, and lemon. Add salt, pepper, onion, and grated-zucchini-potato mixture. MIX WELL!


Get your cooking sheet out & pre-heat the oven to 200 degrees Fahrenheit. This will just be for keeping the patties warm after on the stove. Line the cookie sheet with foil nad set aside. 

Heat a large skillet over med-high heat with the 1 tbsp of melted butter. After a few drop a small handful (or spoonful), of zucchini fritter batter in the frying pan. Use a spatula to flatted the fritters. This will help with the yummy crispiness :)



You can cook a couple fritters at a time. The crispier and darker the fritters are, the more delicious they will be. Place them in the oven on the cookie sheet to keep warm until your hubby gets home!!! 


But maybe have a back up plan in case these might be too "healthy" tasting for your husband or guest, but again I LOVED the taste of them :)
